I have this and the 4" paring knife. I don't need any other knives, period.

This is a nicely balanced, weighty knife.

I have a pretty full set of Henckels Five Star, but since buying this knife, if I only had one knife, this would be the one I want. I have found it to cut everything well, from cheese to meat, but it excels at chopping and slicing.

I like the handle even better than my Five Star set, and the weight and heft of the blade really make cutting large or chopping large quantities of items like onions or potatoes simple and easy -- it really saves effort when preparing meals for large groups. The Santoku blade makes paper thin slices of meat, fish, cheese, or potatoes or onions a breeze!

If there's a flaw in this knife (I have dropped it a couple of times), I cannot find it. As do all Henckels, it comes with a nice edge that is so easy to maintain, and balances toughness and sharpness with outstanding resistance to staining.

HIGHLY RECOMMENDED.

I've been buying Henckel knives for my children for the past couple of years. Gifts for Christmas mainly, they keep asking for more. The latest being a twin cuisine 7-inch santoku hollow edge. My son raved about this knife, saying it was the best all around kitchen knife ever made. They do alot of entertaining and appreciate good sharp knives in the kitchen. So this one is a real winner and probably won't be the last one I buy.....
